In the new Ca' Bonfadini’ s restaurant, chef Lorenzo Cogo
offers a selection of flavours and colours from the Venetian lagoon reinvented with knowledge and inventive.
At the historic Ca’ Bonfadini residence on Fondamenta Savorgnan canal bank, there is a new point of reference for the new signature cuisine.
Overlooking the Cannaregio Canal, Dama Restaurant is the place to enjoy a visionary cuisine in a refined and welcoming atmosphere, in which the excellence of raw material is enhanced by unpredictable and surprising combinations.
The chef, Lorenzo Cogo, presents its cuisine in these words: “My cuisine stems from a personal philosophy of catering: I like to enhance local products through the many experiences and culinary techniques gained in my travels.
I’m not an extreme innovator, I’m just a cook who deeply respects raw material and reinvent it with imagination“.
The impeccable quality of the dishes is framed by a soft light environment, characterized by long tables obtained from recovered “briccole“, typical larch poles indicating the limits of waterways in the lagoon.
As for the cuisine, the project also proposes a “visionary synthesis” with Venetian features.
In this case we represent the characteristic “campo veneziano”, the “square”, the fulcrum of the social, commercial and religious life of Venice.
Hospitality, which has always been an essential element for Venetians, a people accustomed to hospitality by vocation of the city itself, here finds its own form in the attention to detail, in the knowledge and courtesy of the staff and in the pleasure of sharing.
A sharing made of stories, traditions, discoveries and experiences.
